Allergen matrix builder for your menu
In short
UK food businesses must be able to tell customers which of the 14 allergens are in every dish. Add your dishes below, tick what each one contains, and print the matrix for the pass and front of house. Date it, and redo it whenever a recipe or supplier changes.

This sheet records what is in each dish. It does not replace talking to the customer, and it cannot rule out cross-contamination in your kitchen.

Questions people ask first
What are the 14 allergens UK food businesses must declare?
Celery, cereals containing gluten, crustaceans, eggs, fish, lupin, milk, molluscs, mustard, tree nuts, peanuts, sesame, soya, and sulphur dioxide or sulphites above 10mg per kg or litre. These come from retained EU Regulation 1169/2011 (Food Information Regulations 2014).
Do I need a written allergen matrix?
You must be able to give accurate allergen information for every dish you sell loose or made to order, and you must tell customers how to get it. Since 2025 the Food Standards Agency recommends giving that information in writing and backing it up with a conversation, and an allergen matrix is the simplest way to do both.
How often should an allergen matrix be updated?
Every time a recipe, ingredient or supplier changes, and as a routine check whenever the menu changes. Date the sheet so staff can see it is current.
